Today I made some vegetarian chili and had a Boca hot dog for the first time. They were a little spicy but not too bad compared to other veggie dogs I have had. I prefer them over the tofu dogs I had at my brothers house over Labor Day last year. I have never tried the Boca burgers yet, but my daughter eats a lot of those. Lately, I have been eating vegetarian for lunch about five times a week and have enjoyed the change. I really like tofu burgers and Amy's regular flavor vegetarian burgers. The veggie chili and sloppy joes I make also make a good lunch that even my husband enjoys taking to work. The benefit is not only to our budget, but in nutrition. For the most part, the dinners I have chosen to eat have been fairly low in fat and cholesterol and have a moderate amount of protein for one meal. I may never become a true vegetarian, but I do appreciate more meals now since becoming aware of how to cook them now since joining CK thanks to all my veggie friends here at CK.
I continue to have to rest from exercise because of my back. Hopefully in a few more weeks I will be able to get back to a normal exercise routine. Tonight I just walked the dogs to the mailbox because I couldn't stand just sitting around all day. I can tell that sitting around is getting to me too. I can at least keep stretching, or I will see if that doesn't hurt tomorrow since some of my pain has gone down now. I can really tell you exercising does play a part in my mood !!!!!!! Getting out in the evening and waling the dog, now dogs is good for me and them. Next week I go in for a shot and three MUAs....can't wait. The doctor asked me what I did to aggravate my back and all I could come up with was to say I tried to live my life like everyone else ?????????????? Just goes to show you how fragile my back is ?
Anyway, I think I am finally getting over my all of my food cravings and bad girl feelings about eating of sorts. Yes, after the bankruptcy thing I let myself indulge in things I hadn't in three years. I feared not having money for the right food and began to eat the wrong food. I don't know why I went through this, but I did. I have finally settled down and gotten a grip on myself and have come to realize nothing has changed. I will be able to eat what I have always eaten, fresh fruits and vegetables. My husband can always give up his soda and cool whip if it comes to that. Hey, I have cut down on my soda, why can't he ! I make his lunch every day, so at least he can do is give me my vegetables. I don't drink beer, smoke, not suppose to eat candy, don't eat junk food, but by golly, I want my red peppers, cucumbers, tomatoes, and carrots every day if my husband is going to have cheese every day. We don't eat potato chips or eat other junk food, no ice cream in this house, just potatoes, rice, noodles, meat, and fresh veggies...and his pudding and that cool whip. Me, I love my fruit, and plain soy yogurt that I make into freezies. There's not much glamor in our diet except for the occasional Amy's frozen entree, but even I need a night off from cooking. Gee, I make most of my food from scratch which I have come to the conclusion is actually more expensive these days then buying premade food in some cases. I am learning to save, but there is just one thing I have to ask, please let me keep my vegetables.

Hey there, sushi lover - it WOULD be a blast!!! I could wrap sushi all day - and just eat a few bites. I make INARI which is stuffed bean curd (stuffed with rice and vegies) and I love Vietnamese Salada Rolls with peanut dipping sauce. When I do tuna - I use the left over chunks and cut them fine, add onion, hot sauce and mayo and roll that up into a sushi roll. I also make Sea Cloud - which is chopped scallop with hot sauce, mayo and masago eggs. I

Hope that back does better. I know what it's like. I injured myself on paralel bars when I was 6 and have had a bad neck and back ever since. Now I am 62 arthritis has set in and there is just not help for it. The muscle spasms are the worst - it can go of for days and it seems NOTHING helps. Hope that your's is better soon.

Your new little pooch is cute! I don't think wanting red peppers, cucumbers, tomatos and carrots is too much to ask! I know you can't right now with your back, but could you put in a garden in your back yard to grow some of these items to take a little pressure off the budget. It's so satisfying to watch your own veggies grow!

Cute dog. I had 2 herniated discs a while back. Walking is the best thing for your back, that's what I did once the acute phase was over. Your back is not delicate. Some of the biggest muscle groups are in your back and since I have been developing muscles by weight lifting, plus having some good body techniques, and in spite of the fact that I had patients and some very heavy equipment constantly being moved around (OR beds, 2 ton microscopes, which even on wheels are very heavy) I had NO problems. I'm hefting around a three year old and a baby now in her car seat..... Our backs were meant to be used, but we do need to use good body techniques and strengthen those back and ab muscles.

:heart1: It's funny the things we scare ourselves with ---- sometimes I find myself thinking I'll run out of money for something .... then realize what a silly thought. This book I'm reading by Dr. Amen "The Magnificent Mind At Any Age" --he talks about those thoughts being ANTS in our brain. (Automatic Negative Thoughts) and we shouldn't believe every thought that comes into our heads but question their truth. Kind of like the Beck idea with her 'thinking errors' regarding dieting.
