Yesterday we met with our lawyer and it wasn't too bad. We qualify for chapter 13 if we want to go that route. I learned the difference between using the debt settlement, management companies, going into chpt 13, and trying to negotiate with the credit card companies by yourself which we have tried a little already. Couldn't sleep to well last night. Today my hubby and I are going to the bankruptcy lawyer to see if we qualify for chapter 7 reorganization or if it would be best to get into a debt management program or a debt settlement program. We are looking into all options at this point. I am hoping for the management option,but we'll see. We will take a means test to see where we stand under the new laws. Eating for less

Today I set out to make a grocery list and a menu that reflects a tighter budget. I think I have come up with some good recipes that will please the budget and palate. One goal is also to make a few new recipes each week. Another goal is to make at least two recipes that make a lot so that they can be frozen and stored for later meals. These frozen meals are to be used for lunches and when I don't feel like it or can't make a meal. So far these meals have also served the purpose of helping out ...

Cooking LIght Mashed Potatoes

My husband and I tried the Cooking Light recipe for mashed potatoes and found them to be wonderful. Here is the recipe.
3 pounds potatoes
1/2 cup fat free , less-sodium chicken broth
1/2 cup 2% reduced fat milk ( I used unsweetened soy milk )
3 tbs reduced fat sour cream ( I used Vegan sour cream since I am lactose free )
1 tsp. salt
1/2 pepper ( I left this out )

Making lunches and low fat mashed potatoes

Tonight I made five meatloaf lunches/dinners that can be used for my husband to take to work or for use to have when I don't feel like cooking. Along with the the turkey stew I mad earlier this week, I have stocked my freezer with some meals for his lunch on the days I don't have any left overs of run out of money for sandwich funds.
