One thing is for certain. As I travel down this road of changing my eating habits I find that I am eating things I never considered eating before. It is a real education in flavors and textures. I had no idea that some of the things I used to pass by actually are quite tasty. Tonight for dinner we had portabello pizzas. Now I thought I was going to sit down to a standard pizza with portabello mushrooms instead of pepperoni - WRONG. This was actually large portabello mushroom caps filled with sliced tomato, basil, and mozzarella cheese. It was like a caprese salad on a mushroom without the vinaigrette. I was amazed at how much flavor it had, and all for about 120 calories.

While I was in college we grew some gigantic zucchini and made pizza with zucchini for the crust. They were amazing. A couple of weeks ago I cooked a big butternut squash in the microwave, mashed it with a can of crushed pineapple and a little butter, threw in some Splenda and a bit of nutmeg and had a very tasty, and healthy, main course. I wonder what other healthy gems I will find?

Anyway, abandoning my former eating habits has opened up a whole world of new kinds of foods. And I am learning to use meat as a condiment rather than as a main course.

I have always been adventurous with foods which definitely helps in adding variety to your menu when you are trying to eat healthy. I travel 100% for work and have lost 100 lbs 2x in the past while traveling (and now another 30lbs) - so I can be very good while on the road. Of course I gained the weight also traveling so I can also be very bad if I choose. The reason I ate the hotel buffet 2x this week was because my boss invited me one day and the other day was a prescheduled lunch for me to treat my direct reports otherwise that is very rare for me.
