Saturday, Sep 27 2014 - Blended Salads

This is likely to be old news for many but, for me, it was an amazing discovery. I have had six blended salads this week. I find they are quick and easy, and a very tasty and satisfying way of getting a nourishing meal. The variety is almost endless and I can even toss in a few "super" veggies that I don't particularly care for and they are completely concealed in the menagerie of flavor. In addition to the nutritional benefits of blended salads over conventional salads is the fact that I do not need to add any salad dressing. Instead, I toss in a few capers or some Mrs. Dash, or even a bit of chili powder, for added zest and flavor. I can get totally wild with this. There are recipes all over the internet but I find it easier to just "wing it."
A lot of recipes call for avocados which are high in calories so I avoid them. So far, my favorite thing to add is a fresh beet. I buy a bunch of beets with nice looking greens and use the greens as the base for one of the salads. The first week I was doing this I started with an apple or an orange then added the veggies. I dropped 3 pounds this week and I attribute it to the blended salads.
I did have to invest in a good sturdy blender but it was well worth it.
