OK, so today is shopping day. I only have about 90 dollars to make it through the week on breakfast, lunch and dinner for 4 people. A son who is picky, a hubby who thinks he needs high fat lunch meats, cheeses, crackers, chips and puddings for his lunch. Everytime I throw fruit or veggies in they don't get touched and are tossed by the end of the week, how pitiful. My daughter eats like her dad snacks on everything, while my son picks at everything but goes for peanut butter sandwiches and ramens. I have to fit healthy eating on a small budget. I could probably do it if Easter wasn't tomorrow and I need to pick up a ham which will be a third of the budget. Oh man why me. I am , however, going to make black bean soup, lentils w/rice and french onion soup are on the menu this week. No matter how they decide to eat dinner will be healthy. I will be making double portions so I can take leftovers the next day for my lunch. Yippee. All it took was about 1.5 hours of running through the ideas ckers gave me and checking the drybean website and a couple others for healthy dishes with a frugal budget. I promised Tracey (Teej) that I would be very strict with myself for one week and see where that lands me. So now it is up to me.
