11:19 AM - I work at a university that was recently hit by a tornado. Classes have been canceled for the past 2 weeks. Classes resumed today, and it is great to see the buildings filled with students again.
Doing well today. Added some organic raisins to my oatmeal this morning. Made it much more enjoyable and filling. Plus I got a couple more grams of fiber from them. Got hungry a bit ago (11:00 AM) and ate a Power Bar Whole Grain bar (very tasty, protein, fiber). Plan to go home for lunch and eat a meal my wife is cooking out of a low-fat, low-cal cookbook. I really appreciate her helping me start and maintain a healthy lifestyle.
7:26 PM - Lunch was great. My wife made beef fajitas with plain yogurt instead of sour cream and this pina colada fruit salad that was tasty. I think I actually overestimated the calories I had at lunch. But that was as accurate as I could be. Both of the recipes were from a cookbook entitled 60 Days of Low-Fat Low-Cost Meals in Minutes http://www.amazon.com/Days-Low-Cost-Meals-Minutes/dp/0471346527
It has calorie, fat, cholesterol, and sodium info on each recipe, and, obviously, meal plans for 60 days. My wife I went on a vegan diet for 4 weeks over a year ago, and actually loved it. I would like to cut out meat as much as possible from my diet. Not for weight-loss purposes, but because it really scares me all the stuff they feed and inject into our meat supply. So we are going to try to be as vegetarian as possible. We will continue to eat fish, eggs, cheese, and organic milk, but try to limit our meat as much as possible.
There is a great recipe in that book called The Sportsman's Breakfast. It is just a split english muffin with a piece of provolone or swiss cheese, some lean ham, a ring of pineapple, and a slice of tomato. You then put it in the oven until the muffin is toasted and the cheese is melted. Very good! We have used the ham in the past that is nitrate-free.
Anyway, I have done well today. I need to stay up later tonight and work on a major work project. Situations like these are one of my most difficult times b/c I often eat in an effort to keep myself awake. I will update you tomorrow on how it goes.

I workout at Jackson Sport and Fitness club. It is a great gym. The spinning classes are great too! I have done a few of them, but really enjoyed them.
:) And they just got new cardio equipment, which are nice.

I am going to try that peanut butter in oatmeal thing. Sounds good. I love peanut butter.

Having your spouse be supportive is so great. It'll really help if you have a bad day.
I like a little peanut butter in my oatmeal too--adds a little healthy fat and protein and helps it "stick to my ribs" a bit longer.
