so i feel like ass today, having caught my brother's cold just before leaving california.
i'm vegetarian-- i don't do chicken noodle soup. miso, on the other hand, i love. only problem? i've never made it at home before. i was tempted to just cruise over to whole foods to get some of their amazing cream-of whatever soups, but sick or no, i'm still counting calories... so i experimented a bit-- turned out pretty meh.
i think next time i'll use faux-chicken bouillon instead of vegetable broth, which made it too tangy-- and i'll stick to fresh mushrooms instead of dried. i've got enough leftover ingredients to make quite a lot.

If you use TVP for the "chicken" it's very high in protein, looks/tastes like the real thing, and is way cheaper than a "fake meat" sub.

Hope you feel better! I agree, it would be good to use faux chicken bouillon if you are wanting something soothing like "chicken noodle soup" without the chicken! Sorry, it just made me smile when I read it. Hope it made you smile when you read it on my end.
