Ok, menu planning, menu planning! Here's a recipe that may appeal to some of you (adapted from Kraft Food & Family):

Grab & Go Cottage Crunch
1/2 cu canned peaches (either use the ones that are sweetened with Splenda or get the ones in light syrup and rinse them off... no syrup).
1/2 cu 1% fat cottage cheese or fat free cottage cheese
1/2 cu Kashi Vive cereal or Fiber One cereal

Place peaches in 12 oz cup; top with layers of cottage cheese and cereal. Makes one serving. Serve immediately or cover and refrigerate until ready to serve.

Calorie counts are based on "Carb Clever" peaches, fat free cottage cheese and Kashi Vive cereal.
169 calories, 1g fat, .4g sat fat, 13.4g protein, 31g carbs, 15.3g sugar, 5.7g fiber

Count as: 1 protein, 1 fruit & 1/2 starch
