Huevos Rancheros - without the lard, the complexity, or the guilt.

Yield: 2 x 1/2-tortilla servings
Place salsa in non-stick frying pan. Bring to a simmer. Make two small indentations in salsa. Break an egg into each indentation. Cover pan. Simmer/cook on medium-low heat until eggs are cooked nearly to doneness that you prefer. Turn off heat.
Heat iron skillet to medium or medium high and cook tortilla in heated skillet for 15 to 20 seconds on each side, adjusting the time depending upon heat of skillet.
Put cooked tortilla on plate. Slide eggs and salsa on top of tortilla. At the table, add salt and hot sauce.
For a smaller serving (about 60% of the calories), use a regular-sized tortilla, one egg and reduce the salsa a bit.
Homemade salsa and duck eggs would be an interesting change (serving suggestion not included in the nutritional analysis).
