Frozen Individual Christmas Puddings

These lovely individual puddings make a nice alternative to the traditional Christmas desserts.

  • 1 1/2 cup mixed dried fruit with cherries (unpacked)
  • 1/2 cup walnuts, macadamias or preferred nuts
  • 2 oz chopped glace/crystallized ginger or pineapple
  • 1/2 cup sweet sherry
  • 1 pint low-fat vanilla ice cream (16 oz)
  • 1 pint low-fat strawberry ice cream (16 oz)
  • 1 cup fresh or frozen blueberries


Combine dried fruit, nuts, ginger, and sherry in a bowl. Cover and soak overnight.

Allow vanilla ice cream to soften for about 10 minutes. Place in a large bowl and fold the soaked fruit through. Divide the mixture between eight individual molds to half fill. Press down to flatten top and place in freezer until firm.

Soften strawberry ice cream and fold blueberries through. Spoon over top of vanilla ice cream and press down. Cover and freeze until ready to use.

To remove from molds, dip quickly in hot water and then upturn onto plates. Serve decorated with mixed berries.
