Stir-fried octopus (or squid) in a chili marinade.

(for pre-cooking rice, if necessary, and for marinating octopus)
Yield: 4 x 6 oz octopus servings
Combine wine, oil, lemon and orange juice and rind, ginger, chili sauce, and octopus in a large bowl and toss well. Cover and refrigerate for at least 1 hour or until marinated.
Heat wok over a high heat. Stir fry octopus in its marinade for 4 to 5 minutes, but do not overcook octopus or it will toughen.
Stir in rice, allow to heat through and serve.
You will need to marinate this recipe for at least one hour.
