You will savor this tasty chicken, bacon and rice combo.
Cook rice by gentle boil method (see rice preparation recipe link below). Allow to drain well in colander and keep warm.
In non-stick skillet, heat 2 tablespoons of oil; add bacon, onions, peppers and garlic, and fry until bacon is golden. Add 2 cups chicken to bacon mixture and toss until heated.
Add extra oil to skillet. Add rice and lightly toss (do not stir) with fork until rice and bacon chicken mixture is blended. Season with salt, pepper and soy sauce.
If serving direct from skillet, spoon ring of reserved cup of chicken onto rice then add ring of chopped tomato. Spoon mushrooms into center of pan. Replace lid and garnish with nuts and parsley.
Serve with coleslaw or tossed salad, if desired.
