The cool, yogurt sauce balances the flavor of these spicy potatoes. Serve as a side dish, appetizer or snack.

Suggestions:

Ingredients:

4 large sweet potatoes, scrubbed

3 Tbsp olive oil

3 Tbsp Cajun seasoning *

192.86 g Tzatziki Sauce (see recipe below)


Directions:

Preheat oven to 425°F. Slice each sweet potato in half lengthways then each half into three, to make wedges.

Mix the oil and Cajun seasoning in a small bowl. Brush the mixture over the flesh of the sweet potato wedges.

Transfer the sweet potatoes to a non-stick roasting pan and bake for 15 to 20 minutes. Serve with tzatziki.

Variations:

Nonfat sour cream can replace the Tzatziki Sauce, if desired.
