Banana Bread
A yummy way to use up those overripe bananas!

Yield: 16 x 1 slice servings
- 2 cup all-purpose flour
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup sugar
- 1/2 cup pecans, finely chopped
- 3/4 cup unsalted butter (about 1 1/2 sticks), melted and cooled
- 2 large eggs
- 1 tsp pure vanilla extract
- 4 overripe bananas
Directions:
In a bowl, combine all ingredients.
Pour into a non-stick or lightly oiled loaf pan. Bake at 350ºF for 75 minutes.
