A yummy way to use up those overripe bananas!
Ingredients:
2 cup all-purpose flour
1 1/2 tsp baking soda
1/2 tsp salt
1 cup sugar
1/2 cup pecans, finely chopped
3/4 cup unsalted butter (about 1 1/2 sticks), melted and cooled
2 large eggs
1 tsp pure vanilla extract
4 overripe bananas
Directions:
In a bowl, combine all ingredients.
Pour into a non-stick or lightly oiled loaf pan. Bake at 350ºF for 75 minutes.
