Muffins with Mustard, Egg and Cheese

Ingredients Convert to Metric

  • 1 tomato, sliced
  • 2 eggs
  • 1/4 cup skim milk
  • 2 tsp wholegrain or coarse-grain mustard
  • 2 Tbsp reduced-fat cheddar cheese, grated
  • 2 snipped chives for garnish
  • 2 English muffins, split

Directions:

Toast muffins on both sides, top with tomato and keep warm.

Lightly whisk together eggs, milk, mustard and cheese and pour into a small non-stick saucepan. Cook without stirring until mixture sets around the edges, then stir occasionally until scrambled.

Spoon over muffins, sprinkle with chives and serve.
