Campfire Pot Roast
This oh-so-easy dish is a nice change from the typical campfire fare.

- 1 Certified Angus Beef ® Quick-N-Easy® Pot Roast (about 1˝ lb)
- 1 cup fresh carrots, diced
- 6 small red potatoes
- 1 red onion, cut into chunks
- 1 cup broccoli florets
- 1 can (10˝ oz) low-sodium beef broth
- 1 Tbsp cornstarch, or as needed, to thicken
- 1 dash of garlic or table salt
- 1 dash of pepper, to taste
Directions:
Blend the ingredients in a large Dutch oven or camping soup pot.
Cut pot roast into chunks and add broth (and water if needed). Bring to a boil. Add vegetables, except broccoli. Cook for 15 minutes then add broccoli and cook until slightly cooked (about 5 minutes).
Serve in soup bowls.
Variations:
Serve with sourdough bread, if desired.
