



Light waffles, topped with cottage cheese, berries, chocolate chips, and whipping cream - yum! Even the children can help make this one!
1 1/3 cup small curd low-fat cottage cheese (1% fat)
1/2 cup fresh raspberries
2 Tbsp honey, or less to taste
4 tsp mini chocolate chips
16 frozen mini waffles or 4 frozen 4-inch waffles (preferably whole grain)
1/4 cup light whipping cream
1 Tbsp powdered sugar
1/4 tsp orange extract
WAFFLES: Toast waffles; set aside.
In medium bowl, blend cottage cheese, raspberries, honey, and chocolate chips. Place a heaping tablespoon of the cottage cheese mixture in the center of each waffle (or, for 4-inch waffles, split the mixture between the 4 waffles). Top each waffle with a dollup of the Orange Cream.
ORANGE CREAM: In a small, chilled mixing bowl, using an electric mixer, whip together whipping cream, powdered sugar and orange extract.
