Ingredients Convert to Imperial

  • 2 English muffins, split
  • 1 tomato, sliced
  • 2 eggs
  • 1/4 cup skim milk
  • 2 tsp whole-grain or course-grain mustard
  • 2 Tbsp grated low-fat cheddar cheese
  • 2 chives, snipped (for garnish)


Toast muffins on both sides. Top with tomato and keep warm.

Lightly whisk together eggs, milk, mustard, and cheese and pour into a small non-stick saucepan. Cook without stirring until mixture sets around the edges, then stir occasionally until scrambled.

Spoon over muffins. Sprinkle with chives and serve.
