Ingredients Convert to Imperial

  • 1 small papaya, peeled, seeded & chopped
  • 1 red bell pepper, chopped
  • 1/2 red onion, chopped
  • 2 Tbsp fresh lime juice
  • 1 Tbsp chopped fresh cilantro
  • 1 tsp minced jalapeņo peppers
  • 2 Tbsp all-purpose flour
  • 0.45 kg sea scallops
  • 1 dash of salt
  • 1 dash of black pepper, or to taste
  • 1 Tbsp olive oil

Directions:

PAPAYA SAUCE: In a medium bowl, combine papaya, red bell pepper, onion, lime juice, cilantro, and jalapeņo. Set aside.

SCALLOPS: In a large resealable plastic bag, combine flour, scallops, salt, and black pepper, and shake to coat.

In a large skillet, heat oil over medium heat and add scallop mixture; cook and stir until golden. Place scallops over papaya sauce and serve immediately.
