A delicious veggie version of the traditional hamburger.

Yield: 4 x burgers
Boil potatoes for 15 to 20 minutes, or microwave them for 5 minutes. Transfer them to a large bowl.
Mash potatoes until smooth. Add grated zucchini, chives, parsley and egg. Mix well. Fold through oats and barbecue sauce. Shape mixture into 4 patties. Dust lightly with flour.
Bake at 350ºF for 20 minutes.
Serve patties on bread rolls with salad, if desired.
