This combination of ingredients makes perfect sandwich fillings.
Recipe can be made several hours ahead. Wrap firmly in plastic wrap or foil to retain freshness.
2 Tbsp fresh chives, chopped
2 Tbsp capers, drained and chopped
1 Tbsp lemon juice
1 medium red onion, thinly sliced
1/2 medium cos lettuce, shredded
3 large pita bread
8 1/2 oz light spreadable cream cheese
14 oz canned pink salmon, drained, flaked
Using an electric mixer, beat cream cheese, capers, chives and juice in small bowl until combined.
Spread cheese mixture along centre of each pita, top with salmon, onion and lettuce; roll up.
Cut rolls in half and serve.
