Passion fruit and apricot give a touch of the exotic to this low-fat ice cream.

Yield: 6 x 1/2 cup servings
FRUIT SAUCE: Mix together apricot jam, passion fruit and 1/4 teaspoon sugar substitute.
ICE CREAM: Place milk, egg white, vanilla, and 1/2 teaspoon sugar substitute into a food processor or mixer and process until thick and fluffy.
Pour milk mixture into a freezer-proof bowl and freeze until beginning to set around the edge. Remove from freezer and beat until smooth. Stir through 2/3 of the passion fruit sauce and return to freezer until firm.
Use remaining passion fruit sauce over top of or with ice cream.
Passion fruit may be found in the exotic produce section of the grocery store, farmer's markets, or Asian markets.
