Lamb chops can be a healthy meat choice but when fried the calories increase quickly. Instead, cut the fat and up the vitamins by grilling smaller leaner chops and adding nutritious fresh fruit.

  • 8 small lamb chops, fat trimmed (about 17 oz. or four 4ΒΌ oz. chops)
  • 3 ripe nectarines, pitted and diced
  • 1 navel orange, peeled and cut into pieces, save remaining juice
  • 1 tsp grated fresh ginger
  • 3 spring onions (green onions), sliced
  • 1 pinch freshly ground black pepper
  • 4 large lamb chops
  • 1 Tbsp dried rosemary
  • 1/4 cup oil

Directions:

Grill lamb chops for 4 minutes each side or until cooked.

To make salsa, combine nectarines, orange flesh, orange juice, and ginger in a serving bowl. Mix well. Stir in spring onion and freshly ground black pepper.

Serve immediately or refrigerate before use. Serve salsa over lamb.

Variations:
