For a crunchy salad, include this lighter version of the ever-popular apple-veggie salad.
Preparation Time: 15 mins
Yield: 4 x 1 cup servings
Combine apples, orange, celery, and walnuts. Season with salt and pepper. Mix together lemon juice, orange juice, yogurt, and add it to apple mixture.
Line a salad bowl with lettuce leaves and mound the salad in the dish. Garnish with wedges of red skinned apple.
Note: The apples should be sprinkled with lemon juice to prevent browning.
