  • 1 onion, chopped
  • 14 oz zucchini, grated
  • 1 can (14 oz) creamed corn
  • 1 cup water
  • 2 cup low-fat buttermilk
  • 1 tsp cracked black pepper, or to taste
  • 4 chives, snipped (for garnish)

Directions:

In a large saucepan cook onion in a small amount of water until softened. Add zucchini, corn and water and bring to a boil. Cover and simmer for 15 minutes or until zucchini is tender.

Add buttermilk and reheat without boiling. Season with black pepper and garnish with chives.
