Soya Bean Patties

Simple to make and tasty too!

Suggestions:

Patties can be served either hot or cold.

Ingredients:

2 garlic cloves, crushed

1 1/2 tsp curry powder

1/4 cup dried breadcrumbs

2 Tbsp dried breadcrumbs (extra)

2 Tbsp canola oil

1 medium carrot, finely chopped (3.5 oz)

1 medium onion, finely chopped (3.5 oz)

1 cup soya beans (pre-cooked or canned)

2 sticks celery (5 oz)

1/2 cup wholewheat flour (2 oz)


Directions:

Blend soya beans with carrot, onion, celery and garlic (easily done in a food processor).

Mix in flour, curry powder, salt and 1/4 cup breadcrumbs.

Form into 12 patties and dip in extra bread crumbs. Shallow fry in oil for about 5 minutes on each side.

Variations:

Dried soya beans or other different dried beans and vegetables may be used as long as portions remain about the same.
