A few weeks ago in the Houston Chronicle Elizabeth Pudwill wrote an article about those wonderful creations we know as " Burgers". Only hers were the alternatives to the typical beef burgers that appear on most American tables. I cut out the recipes because I like alternative type recipes for rainy days and enjoy trying new things. Health wise some of these alternatives can have some benefits as well. So, through out the week I will be sharing these recipes with you. The first one is the common Salmon Burger. I have seen variations of this recipe myself. I myself have several variations of this recipe. So, here is Ms. Pudwill's version.

1 tbs Hellmans'Real Mayonnaise
1 tbs chopped dill
8 ounces fresh Salmon, grilled, cooled and flaked
1 egg
1/2 cup cooked brown rice
1 to 2 tbs olive oil, for frying
1/2 tsp Cajun seasoning, or to taste
2-3 English muffins or potato rolls
lettuce and tomato slices
In a bowl, stir together mayo and dill: refrigerate.
In another bowl, mix Salmon with egg and rice. Form into 2 or 3 patties. Heat oil in a cast iron skillet. Gently place patties in hot oil. Fry about 2-3 minutes on each side, sprinkling with Cajun seasoning to taste. Serve each patty on bread with lettuce and tomato. Makes 2-3 servings

I haven't tried this version of Salmon burgers yet. The ones I have tried are made from raw Salmon which you flake and then add bread crumbs, egg, seasoning, and then grill. I prefer the Milder Salmon which is usually Farm raised over the wild Salmon which I know is suppose to be better for you. So, so, at least I'm eating fish. Speaking of fish, tonight I grilled cod which is a very mild fish on the grill. We bought it frozen from Whole foods which is where I like to buy my fish from. I can eat fish if it's grilled, which around here you can almost do year round.
I've been enjoying the new TV season a little too much since my back needed the extra time to recoop. There are a few new shows which show some promise. I like the new show Fringe about a FBI agent who investigates some weird cases. Then there is Amanda Tapping's new sci-fi show called Sanctuary. It's about giving sanctuary to living beings that are not normal. The show was a internet series now being bought to network television by the sci-fi channel. This week I'm looking forward to watching the show Eleventh Hour. These are the new shows I am interested in. I am a big fan of these shows : Heroes, Chuck, Life, Bones, House, Smallville, Ugly Betty, Pushing Daisys,Greys Anatomy, Er, CSI Miami, NY, Star Gate Atlantis, Prison Break, Desparate Housewives, Army wives, NCIS, Ghost Whisperer. I do think I like tooooooooooo much TV and will have to decide which shows to cut back on soon as there is simply not enough time in the week to watch all of these shows.

:hi: I really wanted to get into Fringe, but just couldn't. I have 2 shows that I watch religiously and then another 2 that I try to catch up on via computer when I can. The two that I watch: Biggest Loser and Grey's (did you see it last night, I thought it was really good!) -- and the two that I watch on the computer Private Practice & Lipstick Jungle. Hope you are feeling ok...you seem really subdued. Thanks for the recipe. It wouldn't cross my mind to make a burger out of salmon but it sounds really good!

I've never seen a recipe for salmon burgers where the salmon is cooked first but that might actually be good for me since I try to avoid bread (and bread crumbs) and this recipe doesn't have any. I have a few shows that I like to catch each week. This season I'm adding "Mentalist" to that list. It's on CBS on Tuesdays (though not tonight)

We can grill here all year too...you just have to trapse out in the snow to do it. :laugh5: Interesting recipe....I don't know if I would like it, though. Wow, that's a lot of TV. I can watch a lot of shows while I'm painting....but I miss a lot because I'm really just listening. I like Desperate Housewives, Prison Break, Survivor, CSI - all of them, and I like to watch the forensic shows or 48 hours - those are really great to "listen" to. :laugh5:

:hi: I am not a big fan of TV. However, I do like a few shows like Dancing With the Stars...So You Think You Can Dance...America's Got Talent.. :kiss:
