Through out this Holiday season I am reminded that there is one free gift that doesn't cost us anything but a little time, the gift of encouragement. Yesterday, I saw a young girl at the gym who was in need of some. She was quite a bit over weight and apparently was not accustomed to doing any exercise. More than ever the holidays have caused me to be tempted because my mind is going like a gerbil in a wheel...round and round. Seriously, I have felt more tempted this year than last year when I seemed to have less of an emotional struggle to stay on course. I have some food parties to go to over the next few days and will have to get my nerves of steel prepared ahead of time to face food pushers. Yea, we all know them. Now, I don't need any help with my ever going inner desire of wanting food that is not good for me. It is built into me to want some of that " old " food that is not good for me. I am getting most of my exercise in this week walking around shopping. Today I got in a couple of miles just shopping. I know it's not the same ting as if I was on the treadmill doing 3.0 speed. but it will have to do until things slow down a bit and I can make it to the gym. I tried this recipe out from Diabetic Cooking yesterday. I used red peppers instead of green and my husband and I really enjoyed the meal with Vigo's Mexican Rice an a salad. The meal freezes well and doesn't take much time to prepare. I used frozen corn that I set out to thaw for thirty min. because I like the crunchiness of white and yellow corn frozen over canned. I also used soy cheese on my half and regular cheese on my husband's half since I am dairy free. Mine came out good.
