Morning all! I'm in the ER with my father-in-law waiting for him to get back from X-ray, he has severe pain and can't urinate, maybe a kidney stone, prostate, bladder or kidney infection and ruling out obstruction. He's a tough older guy, handicapped, amputee and riddled with rheumatoid arthritis to the point it's deformed his hands, arms and remaining foot. I hope it's nothin more than an infection.

As for me my weight is back up to 199 and I'm not surprised I was very bad yesterday; I made a ginormous salad, couscous and pan fried fresh water trout. It was delicious! I spread Dijon mustard on the fish, rolled them in lemon flavored Panko bread crumbs then pan fry it in a little oil, blot excess oil then transfer to a 250 warm oven until all batches are complete. I also made a quick pan sauce with the Dijon mustard, lemon juice, 2tbs of the pan oil and 2 tbs of Land O Lakes butter w/ canola oil. I was kinda craving fat and fried foods all weekend, this seemed the lesser of all evils to me, it crushed the cravings and made my husband smile. I accounted for the calories but ween having a heavy meal and eating full meals yesterday, I'm not surprised about my weight being back up. Now that I had a taste it's in my sights and that is my next goal to hit 197 and pass it.

Well I hear Dad's voice down the hall, he's coming back so tata...

Update: he's OK, thank goodness just a infection, sent home with a catheter and antibiotic. So relieved!

That is a delicious sounding meal. Sometimes we have to just make something for our soul and move on. Sounds like that is just what you did.
