Well the saga of staying at home recovering from surgery contiues. This one has really wiped me out. Needless to say, I've allowed my eating to get lazy. Ok, I have been off of work for over 3 weeks now recovering from surgery. Yesterday I was CRAVING spaghetti and garlic bread something terrible. I am able to manage the spaghetti by using Dreamfields pasta and a very meaty homemade sauce. However, the garlic bread has always been a stumper. However, I found the answer! Yesterday I was watching the Food Network. There was a show on that I hadn't seen ... something about Big Guy Bites??? Anyway, he was making fish tacos. He also made a great looking black bean something or orther. I called it "fiesta salad" because it was so colorful. Anyway, I tried to think about how to make this with a little less "fat" than he had and still make it good. I apologize if I've posted about rock eating in the past, but I really think it is a relevant topic that needs further exploration.
