Ingredients

  • 2 cup all-purpose flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sugar
  • 1/2 cup pecans, finely chopped
  • 3/4 cup unsalted butter (about 1-1/2 sticks), melted and cooled
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 4 overripe bananas

Directions:

In a bowl, combine all ingredients. Pour into a non-stick or lightly oiled loaf pan.

Bake at 350ºF for 75 minutes.
