Cooking Time: 7 mins
Yield: 2 x muffin sandwiches
Toast muffins on both sides. Top with tomato and keep warm.
Lightly whisk together eggs, milk, mustard, and cheese and pour into a small non-stick saucepan. Cook without stirring until mixture sets around the edges, then stir occasionally until scrambled.
Spoon over muffins. Sprinkle with chives and serve.
