A colorful dish - great for using leftover Thanksgiving turkey, or anytime!

  • 1/4 cup orange juice
  • 1 1/2 Tbsp red wine vinegar
  • 1 1/2 tsp poppy seeds
  • 1 1/2 tsp olive oil
  • 1 tsp Dijon-style mustard
  • 1/8 tsp pepper
  • 5 cup red leaf lettuce, washed, dried, chilled and torn
  • 2 cup baby spinach leaves, washed, dried, chilled and torn
  • 1/2 lb cooked skinless turkey breast, cut into 1/2-inch julienne
  • 1 can (10½ oz) mandarin oranges, juice pack, drained
  • 1 as needed, orange zest


DRESSING: In small bowl combine orange juice, vinegar, poppy seeds, oil, mustard, and black pepper. Set aside.

SALAD: In large bowl toss together lettuce, spinach, turkey, and oranges. Pour dressing over turkey mixture.

Garnish with orange zest and serve immediately.


If using mandarin oranges in syrup (versus juice pack), then adjust nutritional data.


Use leftover or pre-cooked turkey.
