Ingredients
- 1/4 cup orange juice
- 1 1/2 Tbsp red wine vinegar
- 1 1/2 tsp poppy seeds
- 1 1/2 tsp olive oil
- 1 tsp Dijon-style mustard
- 1/8 tsp pepper
- 5 cup red leaf lettuce, washed, dried, chilled and torn
- 2 cup baby spinach leaves, washed, dried, chilled and torn
- 1/2 lb cooked skinless turkey breast, cut into 1/2-inch julienne
- 1 can (10½ oz) mandarin oranges, juice pack, drained
- 1 as needed, orange zest
Directions:
DRESSING: In small bowl combine orange juice, vinegar, poppy seeds, oil, mustard, and black pepper. Set aside.
SALAD: In large bowl toss together lettuce, spinach, turkey, and oranges. Pour dressing over turkey mixture.
Garnish with orange zest and serve immediately.
Variations:
If using mandarin oranges in syrup (versus juice pack), then adjust nutritional data.
Tips:
Use leftover or pre-cooked turkey.
