A sweet and spicy soup.
Preparation Time: 10 mins
Cooking Time: 35 mins
Yield: 4 x approx. 1-1/2 cup servings
Melt butter in saucepan and sauté onion until tender. Add curry powder and sweet potato and cook for 1 minute.
Add water, season with salt and pepper. Simmer, covered for 15 to 20 minutes or until tender. Purée mixture until smooth and place into a clean saucepan.
Add milk, coriander and orange rind. Re-heat until heated through.
Sprinkle sugar over peaches and grill until caramelized. Serve soup topped with peach and extra orange rind.
