So, this whole South Beach diet thing is going fairly well.
My main problem has been not eating enough because I have been too bloated from all the veggies which has given me a full, I don't want to eat anything, feeling. However, this has also caused me to feel moody and weak by the late afternoon.
Today I managed to eat more in the morning and felt really full (in a satisfied but not bloated way) after eating the baked mackeral.
I seem to be eating too much fat also. Ah, balance, balance, I seek you diligently!
So, after 4 days on the SBD my feeling is good. Don't like being bloated from so many veggies without grains or fruit though. My pants are definately looser although I didn't get a chance to weigh myself yet. I'll try and go see tomorrow.
The only issues I have are that I feel as if I am making poor nutritional choices overall even though I am geeting thinner and presumably losing fat.
Before I drank coffee once a week. Now I drink it 6 times a week.
Before I had dairy MAYBE once a week. Now I have milk in coffee nearly every day.
Before I used homey as a sweetener. Now I use artificial, cancer causing sweeteners.
Before I seldom ate meat (other than fish). This week I ate pork one day (so BAD!) and duck another (fatty).
This is just a temporary choice of foods till I can break my sugar addiction and ease slowly back into a more balanced eating style. Is it worth it? I will see.
One my love life and relationship issues. Last time I mentioned that I needed to talk to my amazing boyfriend about how I was feeling regarding postponing the wedding if I weren't able to have it in the USA. However, while I slept, he sent me the following email...
"Regarding having the first wedding in America, I am fine with your decision. If it means that much to you, it means that much to me! Even if we might have to postpone it until the case is fully settled, I'm fine with it.

Let's see if we can get to the states somehow this summer. We have about US$1,700 credit with Travelocity. If that is not enough for both our trips, tell them that we are more than willing to top it up. Money is not any issue! GOD bless you richly, princess!

Do I not have the best boyfriend ever? It turns out he understood how much it meant to me without me having a long drawnout chat. *happy sigh*
Tomorrow morning I am making breakfast burritos for him and his guests, whom are super close friends of his that led him to know the Lord (Jesus). I set up a surprise for him and his guests who are all flying in tonight by buying enough flowers to make 5 boquets (for only 6 USD), arranging them nicely and placing them in the rooms in his house. Then I put some chocolates on the pillows. I'm sure his guests will be thrilled!

I wonder, would taking something like Gas-X help relieve some of that bloating?
As far as nutrition goes... yeah, I hear you. I'm just a plain old-fashioned calorie-counter, and although I'm doing much better than I was before, I still seem to have too much fat at the end of the day. I've been thinking about researching the so-called "super foods" and incorporating them into my diet; if I find any good, South-Beach-friendly recipes (I love to cook, too!), I'll share them in my blog.
So where will you have your wedding in the States?
