  • 14 oz cooked fresh lima beans
  • 2 ripe tomatoes, finely diced
  • 1 tsp Equal® Spoonful *
  • 1 pinch of cracked black pepper, or to taste
  • 2 tsp apple cider vinegar or wine vinegar
  • 1/2 Spanish onion, finely diced
  • 2 cup torn lettuce leaves
  • 1 stalk celery, thinly sliced
  • 2 Tbsp chopped walnuts
  • 1 Tbsp fresh chopped basil
  • 1 Tbsp fresh chopped mint
  • 1 Tbsp fresh chopped parsley
  • 2 Tbsp lemon juice
  • 1 Tbsp olive oil


Cool the cooked lima beans.

Sprinkle the tomato with the Equal®, black pepper and vinegar and set aside. Toss together the beans, tomato, onion, lettuce, celery and walnuts.

Whisk together the fresh herbs, lemon juice and oil and lightly toss the dressing through the salad.


* If desired, replace 1 teaspoon Equal® Spoonful with equal amount of sugar.

Serve salad as a side dish or as a light meal with crusty bread.
