  • 1 cup California seedless grapes
  • 1 can (15 oz) small white beans, drained
  • 1/2 cup diced celery
  • 1/4 cup minced green onions
  • 2 Tbsp chopped parsley
  • 2 Tbsp vegetable oil, such as canola (for dressing)
  • 2 Tbsp lemon juice (for dressing)
  • 1 tsp Dijon-style mustard (for dressing)
  • 1/4 tsp salt (for dressing)
  • 1/4 tsp pepper (for dressing)
  • 3 - 4 lettuce leaves, or as needed


SALAD: Combine grapes, beans, celery, onions, parsley and the lemon-mustard dressing; mix well. Serve on lettuce leaves.

LEMON-MUSTARD DRESSING: Combine vegetable oil, lemon juice, mustard, salt and pepper. Mix well. Makes 1/4 cup.
