SNOW PEA SALAD: Trim snow peas. Slice mushrooms, bell pepper and spring onions and place in a large salad bowl with snow peas and pea shoots.
DRESSING: Heat oil in a saucepan. Add chili, garlic, sunflower seeds, and sesame seeds and fry until golden brown, stirring constantly. Remove from heat, add sherry, water, ginger, soy sauce, and liquid sugar; mix well.
Immediately spoon dressing over the Snow Pea Salad and serve.
