I made the most yummy Indian Tomato Soup. I was really surprised at how good it was. If you like your soup spicy-warm here is the recipe:
16 oz can of crushed tomatoes
2 tbsp extra virgin Olive oil
1 med. onion, finely chopped
1 green chili pepper seeded and finely chopped
3 cloves of garlic, pressed through a garlic press
1 tbsp of tomato paste
4 cups vegetable broth
1/2 tsp of curry powder
chopped fresh cilantro to garnish
Heat oil in a saucepan and add th onion, chili pepper and garlic. Saute until soft. Stir in tomatoes and cook for about five minutes. Blend vegetable broth and tomato paste in a bowl, then add to the pan. Add the curry powder and simmer for 10 min.
Add the cilantro as garnish.
